We all love a good Disney inspired meal! We continued our Disney family movie night this week and, much to my husband’s delight, the spinner chose Pirates of the Caribbean!

As a Puerto Rican family, we took this Caribbean menu very seriously, but we knew we wanted to make some dishes we don’t normally make.
First of all, we can’t have a Caribbean theme night without some island inspired drinks. We made some kid friendly versions and of course adult drinks, too.

Pirate Punch
- Tropical 7up
- Maraschino cherries
- Grenadine
- Lime
- (Add rum for the adult beverage)
Pour tropical 7up over ice, and add 3-4 cherries. Splash about little grenadine (to taste) and squeeze in a lime wedge. To make this an adult beverage add every pirate’s favorite drink, rum, to the mix.

We created a menu of Jerk seasoned mahi mahi and chicken, maduros (sweet plantains), cilantro lime rice, and mango salsa.
The sweetness of the mango salsa paired with the jerk seasoning on the mahi and chicken and perfectly balanced on our taste buds. They paired beautifully with the citrus in the rice. We hope you enjoy the combination as much as we did!

Jerk Seasoned Chicken
- Bone-in chicken legs
- Spicy Jerk Marinade
- Island Joe’s Caribbean Hot Jerk Seasoning
- Lime
- Olive oil
Wash chicken and place in bowl or ziplock bag. Pour in the spicy jerk marinade and let chicken sit in the fridge for at least 1 hour.
When ready to cook, coat a Pyrex dish in oil and preheat the oven to 425. Pour chicken onto the Pyrex dish allowing a small space in between each chicken. Squeeze lime juice over top of chicken and then sprinkle the Island Joe’s Caribbean Hot Jerk Seasoning over the top. Now, flip each piece of chicken and repeat the lime juice and jerk seasoning on the other side.
Place in the over for about 25 minutes or until chicken is starting to crisp, and then flip chicken over, and place back in the oven. Continue to cook for another 10 minutes or until crispy.
Jerk Seasoned Mahi Mahi
- Mahi Mahi
- Island Joe’s Caribbean Hot Jerk Seasoning
- Lime
- Olive oil
Oil the pan and set to medium heat. Season one side of the Mahi and then place on the pan, seasoned side down. Squeeze a little bit of lime juice, and cook 3-4 minutes on one side. Then season the other side before flipping. Cook for another 3-4 minutes. When finished cooking remove from hot pan and let sit. Add lime juice to the top, and serve immediately.
