For our Mayflower and Mayhem recipe blogs, we’ll spare you the initial, obligatory life story and get right to the recipe! We’re fairly certain that’s what you’re here for, not to find out how we got the recipe, who invented it, why it’s so unique, where it hails from, or any of the other backstory questions you don’t need to scroll through while your hands are deep in ingredients. Without further ado, here is how to make Mayflower and Mayhem’s Campfire Nachos!
- Family sized bag of tortilla chips.
- 1 can of Rotel diced tomatoes and green chilis, drained (can be substituted with preferred salsa).
- 1 can of black beans, drained.
- 2 cups (about 1 pound) of preferred taco meat (we used ground beef for this recipe).
- 2 1/2 cups of shredded cheese.
- 1 cup of chives (green onions).
- 1 cup of chopped sweet onions.
- 1 cup of chopped red onions.
- 1 aluminum pan and tinfoil (you can use a skillet or other suitable container).
- This recipe makes two layer nachos, so start off by covering the bottom of the pan with nachos.
- Sprinkle 1 of the cups of cheese over the top of the chips to cover them.
- Add half of the meat, beans, and onions over the cheese.
- Sprinkle a half cup of cheese on top.
- Repeat in the same order using the rest of the ingredients. For extra cheesiness, add a layer of cheese on top of the final product.
- Cover with aluminum foil (if you want more smoky flavor when cooking over the campfire, leave just a small opening where the foil meets the pan).
- Place on a grate or other sturdy surface (rock, stone, ground) near the fire. Do not place directly over the heat or the chips will burn. The point here is to get the cheese to melt.
- Typically, the actual cooking process take roughly ten minutes, but this can vary depending on how hot your fire is. Try to turn the pan once during cooking to get the cheese on the other side.
- Remove from the fire and enjoy!
Remember, you can always add other ingredients to your own taste either layered into the nachos or after the fact. Some yummy examples include jalapenos, cilantro, mushrooms, sour cream, and guacamole. Our recipes are not set in stone; have fun with them!
